Besides, you can always add more, but you can&#039;t take it back out. ;-)   I didn&#039;t know that about the weight of a cup of flour, but it is very interesting. Regarding the flour in the cookies (and the other two recipes from your previous post), one thing I have learned from taking classes at King Arthur Flour is that the way most of us measure flour (by volume) ends up putting WAY too much flour in most recipes. A cup of King Arthur flour weighs about 4.25 ounces, but measuring it with a cup could put more than 6 ounces of flour into the recipe. Stirring it well with a fork first can help bring it down to 5 oz or so. The most important thing is not to drag the cup through the flour but to sprinkle the lightened flour into the cup gently. Now I just use a kitchen scale for most baking. I have rarely found a recipe that was harmed by using the smaller amounts of flour that result.</description>
