Started out with coffee. Instant today. There was left over brewed from yesterday (blech!) which Sweetie drank so instead of making a new pot I just went with instant. (Notice my Rabbit Bites mug – love those guys!)

Breakfast was a whole grain bagel with Earth Balance.

I had the day off from work so I decided to attack a project that was long overdue and had been in the back of my mind for months: cleaning the refrigerator. People it was gross. I knew it was dirty, but I didn’t realize quite how bad until I took it apart and cleaned everything. The thing is it is so satisfying to have it done. Now when I open up the door, I just marvel at how clean and beautiful it looks. When Sweetie came home, I made him go look at it right away.

Lunch was two simple quesadillas: tortillas topped with salsa and Daiya cheese and heated in a non-stick pan.

Later, I got a hankering for a snack so I had some chips and wasabi peas in the midafternoon. No, I didn’t eat the whole bag of chips. There weren’t that many left.

For dinner, I took a bunch of kale out of the Very Clean Refrigerator and chopped it up. It looked so pretty – like a kale forest or something.

Then I braised it with mushrooms and an onion in oil and served it over quinoa. Sweetie and I seasoned our plates at the table with the condiments of our choice.

I haven’t been much on sweets these days, but I felt like having dessert tonight so I had some peanut butter and chocolate chips in a cup (heated in the microwave for about 30 seconds).

And that was my day in food.

Saturday I got up and had my usual coffee with So Delicious Coconut Milk Creamer.

Then I had a toasted hemp bagel with Earth Balance, and I took my supplements.


I debated about whether to photograph the AZO, but then I decided that yeast infections are something many women suffer from, and they’re nothing to be ashamed of. If you’re someone who suffers from chronic recurring yeast infections and haven’t found anything that works to prevent them, I suggest you try the AZO Yeast, Natural Symptom Prevention and Relief. I take one tablet a day, and it really seems to be preventing the infections. (And I’m not being paid to say this.) I take two calcium-magnesium with vitamin D supplements in the morning and two in the evening for a total of 1,000 milligrams a day. My doctor was really pushing me to take calcium for the last couple of years, and I couldn’t really argue with her, especially since my mother has osteoporosis. It took me a while to get going on taking them regularly, but earlier this year I made a concerted effort to get in the habit. A few weeks ago I decided to try taking spirulina to increase my energy. (I take three spirulina tablets in the morning and three at night.) I don’t know if spirulina is a waste of money, but I do seem to be feeling pretty good so for now I’ll continue.
As I had my coffee and my bagel and my supplements, I thought about running, feeling as if I needed to do it, since I hadn’t run since Wednesday. One reason I’m afraid of running is because I’m afraid I’ll be uncomfortable. I usually am uncomfortable when I run. There’s no such thing as an easy run for me at this time. Of course the only way to get comfortable is to do it more. So I went and ran at the park yesterday on my own, without the aid of a running partner or the treadmill, and I was uncomfortable, and I was slow, but I managed two and a half miles. Not bad, huh?

Let’s go back in time and look at a dinner I made in January (!): pan-fried seitan, baked sweet potato and curried cauliflower with peas. I bake the sweet potatoes at 400 degrees for about 50 minutes, and cook the seitan thusly: heat safflower oil in non-stick pan, slice the seitan and place it in the pan, and cook until browned, about 5 or so minutes on each side. For the cauliflower, heat oil in a large skillet with a cover, add curry powder, and then the cauliflower pieces. Once the cauliflower is somewhat coated, I add water to the skillet, dump in some frozen peas and cover and steam the mixture until it’s done. You’ll have to excuse the lack of instructions as far as exact measurements and times. For a number of years, I cooked using recipes in cookbooks, and I believe this practice got me comfortable in the kitchen so that now I just cook intuitively, usually knowing what “enough” of an ingredient is and how long to cook something till it’s “done.”

We have no internet or telephone at my house, and it’s really thrown a wrench into my weekend plans. The phone I can take or leave, but not the internet. I came back from class yesterday hoping to wipe out some of my brain cells watching The Real Housewives of New York City online, but alas it was not to be. Also, the paper and presentation I’m doing for my class (due next week!) is on Web 2.0. I called the phone company on my cell phone and the problem supposed to resolved by tonight. Tonight?! I’m dying I tell you. Right now I’m at a local coffee shop that has free wifi, saving webpages I may need to use as web archives so I can read them offline. Oy.
In other news, what I’ve been up to lately has been mostly working, sleeping, and worrying about my paper. I did run on the treadmill twice too. I have given myself a pass on working out until my paper is done, but I decided it would be more helpful than not to do a couple light workouts last week so I did run / walk intervals on the treadmill. There is a new treadmill at the gym and I love it. Running on it felt so fast and easy. It also helps that I did it with NO incline. I usually put the incline at 1% which I’ve read simulates running outside. I was surprised how much easier it seemed running without the incline, but I went with it since I was trying not to tire myself out too much. Need to keep my energy for my paper. Which I’ve only written about a paragraph of so far. And that’s all I going to say about that.
Another thing that has happened in the last couple of days is that summer weather has arrived! Remember in my last entry I said we were having a cold snap? (I think they even got a couple of feet of snow in Vermont last week.) Well, that’s over now. Yesterday it was sunny and up in the 80s! It was a beautiful day, even a bit too hot last night. Yup a few nights ago, I was wearing two sweaters and lying with a blanket over me, and last night I opened the windows and was commenting on how “hot” it was. But that’s New England. The weather’s always doing crazy things.
